20 Weird Beer Facts Worth Knowing
Well, deliberate brewing is certainly ancient enough to make the argument interesting. Archaeologists found evidence of beer-making in 13,000-year-old stone mortars at Raqefet Cave in Israel, where Natufian people appear to have brewed fermented cereal drinks for ritual feasts - before agriculture had properly begun.
Your reusable metal straw has nothing on these. Eight gold and silver tubes discovered at Maikop in Russia are thought to be around 5,500 years old and may have been used to drink beer communally from large vessels. Tiny strainers helped keep the sediment out. Sensible!
The Sumerians took beer seriously enough to give brewing a deity. Ninkasi was the goddess of beer and brewing, and the Hymn to Ninkasi, written down around 1800 BCE, describes ancient brewing techniques.
It was part praise song, part practical brewing knowledge - considerably catchier than most instruction manuals.
Do all beers have hops? Modern beer usually does, but beer existed long before hops became standard. Earlier brewers used herbs, spices and other botanicals to flavour their brews. Hops eventually won out thanks to the bitterness, aroma and useful preservative qualities they bring.
Beer without hops? Medieval brewers would like a word.
More precisely, brewers use the cone-like flowers of female hop plants. Inside are compounds and aromatic oils responsible for much of the bitterness, aroma and character we associate with hoppy beer. So that aggressively tropical IPA is, technically, getting some of its personality from flowers.
IBU stands for International Bitterness Units, but your tongue doesn't read spreadsheets. A 40-IBU stout can taste sweeter than a 40-IBU lager because malt, sweetness and the rest of the beer affect perceived bitterness.

Finished beer normally sits on the acidic side of the pH scale. That acidity isn't necessarily something you'll taste as obviously sour; it's part of the balance of the beer and plays an important role in flavour, fermentation and microbial stability.
So acidic and sour aren't interchangeable beer terms.
This is where your tongue makes things complicated. pH measures acidity, but how sour a beer tastes also depends on the types and concentrations of acids present, sweetness and the rest of its flavour profile. Two beers can therefore have similar pH readings without tasting equally mouth-puckering.
Dark beer isn't automatically ale. Pale beer isn't automatically lager. The fundamental difference is fermentation, particularly the yeast involved.
Ales are traditionally associated with Saccharomyces cerevisiae, while lagers use Saccharomyces pastorianus, a hybrid yeast adapted to cooler fermentation. So, colour is a particularly unreliable shortcut for telling them apart.
Yeast has quite the workload. During fermentation, it consumes fermentable sugars and produces alcohol and carbon dioxide.

Trub is the sediment created during brewing, containing spent yeast and other material that drops out of the beer. It isn't a brewing disaster. It's brewing doing what brewing does.
Cold crashing encourages more of that trub to settle before the beer reaches your glass, which is one reason brewers use the technique.
Some of the world’s most popular beer styles are deliberately hazy, with suspended proteins, yeast and hop compounds contributing to their character. Clarity is a style choice, not a universal quality test.
With fresh, unfiltered beer, that natural character can be part of what makes the pour taste so lively.
Ice-cold sounds appealing, but temperature changes how much aroma and flavour you perceive. Serve some characterful beers too cold and you can mute the very flavours you paid for.
Don't confuse cold conditioning with “every beer should be drunk as cold as physically possible”. They are two different jobs.
Fermentation ending does not mean the beer has clocked off. During conditioning, flavours continue to develop and carbonation builds as naturally produced CO₂ dissolves into the beer.

One of the more surprising beer nutrition facts is that beer isn’t just water, malt and alcohol in a glass. It also contains small amounts of protein, potassium, magnesium, phosphorus and several B vitamins, including niacin and vitamin B6.
The exact mix varies by beer style and brewing process - another reminder that what goes into a beer does rather a lot more than create flavour.
That jet-black stout isn't automatically stronger than the golden beer beside it. Beer colour comes largely from the malt used and how heavily the grain has been kilned or roasted. Alcohol strength depends much more on the amount of fermentable material available to the yeast and how fermentation proceeds.
Beer glassware isn't entirely beer snob theatre. Shape influences how the head forms and lasts, how aromas collect above the liquid and how those aromas reach your nose as you drink.
A wide-mouthed glass and a narrow Pilsner glass can therefore make the same drinking experience feel surprisingly different.
That head on your pint is doing more than making the photograph look good. Foam helps carry and release aromatic compounds, contributes texture and gives carbon dioxide somewhere to escape as you drink. Its formation and stability are also affected by proteins in the beer, carbonation and how clean your glass is.
